It’s winter time and that means bundling up in a ton of blankets. Unfortunately, blankets do not prevent the bitter cold from nipping at your finger tips. It’s hard to keep your APM up when your hands are turning blue, so I’ve devised a way to both keep warm and keep away hunger:

Banana Bread!

Well, maybe your hands won’t be permanently warm, but at least you won’t be hungry!

This bread contains whole wheat flour — if you’re completely adverse to whole wheat flour, you have the option to switch it to regular all-purpose flour.

UNIT COMPOSITION

  1. 1 3/4 cups of whole wheat flour
  2. 1 teaspoon of baking soda
  3. 1/2 cup of chopped walnuts
  4. 5 or 6 ripe bananas
  5. 1 cup of raisins
  6. 2 eggs
  7. 1 tablespoon of cinnamon
  8. 2 tablespoons of coconut oil* (you can substitute butter if you’d like)
  9. 1/4 cup of rolled oats

BUILD ORDER

Prep work should take about 20 minutes. Cook time should be about will be about 55 – 60 minutesThis will make 4 servings.

OPENING
  1. Preheat your oven to 350° F.
  2. Grease the sides of a loaf pan with 1 tablespoon coconut oil.
  3. In a bowl, combine your flour and baking soda.
MID GAME
  1. In a separate bowl, beat two eggs.
  2. Add 1 tablespoon of melted coconut oil to the eggs.
  3. Combine your eggs with your flour. Mix until you get a doughy consistency.
LATE GAME
  1.  Take your bananas and smash them into a mushy consistency. (You can do this by taking all of your bananas and placing them in a plastic bag. Then proceed to beat the crap out of the bananas. Great stress reliever if you’re on a losing streak!). If you want to have banana chunks in your bread, reserve one banana and chop it into small 1/2 inch chunks.
  2. Add in your banana mixture slowly to avoid getting lumpy dough.
  3. Add in your raisins, walnuts, cinnamon and half of your oats.
  4. Pour mixture into your greased baking dish.
  5. Sprinkle the remaining oats on top of your bread.
  6. Put baking dish in the oven and bake for about 50 – 60 minutes (cooking time will vary depending on your oven).
  7. When the bread is finished, remove from oven and let it cool.
  8. Eat!

And that’s a GG WP. This bread makes a great snack or an easy on-the-go breakfast. Just pop a slice of bread in the microwave for about 15 – 20 seconds and you’re good to go!

Now, if you’ll excuse me, I’m going to go hide in a big pile of blankets.
